On my way to Machu Picchu in Peru this past March, my tour guide asked me why corn from my country was so wimpy. He said, don’t get me wrong it is sweet but it’s so wimpy.
In South America they eat Peruvian Corn – Choclo. As you can see from the picture it is much bigger and meatier. The name is believed to be derived from the capital city of the Inca Empire.
If you compare it to our sweet corn, the kernels are larger, chewier and more starch like. They usually sell the cobs on the side of the road and at most functions. Its a different taste but it delicious.0
